Brinjal Fry (Egg Plant) Recipe

Wash the brinjal and cut into small round pieces. Heat oil in a pan and stir-fry brinjal pieces over medium-high heat for 2-3 minutes.Mix salt and remaining spices and now cook them on a low heat. Brinjals turn soft very quickly, so no need to stir again and again. Leave to cook for about 2 minutes.

Dal Fry Recipe

Wash Toor dal under running cold water till water runs clear. Take washed dal and 1 cup of water in pressure cooker. Cover with lid, put the weight on.Turn the heat on medium. Let it cook for 5-6 whistles or till dal becomes soft. Let the pressure go down by itself then open the lid. Keep it aside.

Put grated coconut, green chillies, tamarind and ginger in a mixer. Add enough water and grind it to smooth paste. (If it is frozen coconut, add hot water while grinding.) Add brahmi leaves and grind them together for about 2 mins. Pour the ground mixture in a vessel, add enough salt and water(If required).

Wash and soak black chickpeas overnight in water for around 8-10 hours. Drain and transfer them to pressure cooker, add salt and 2 cups water. Pressure-cook them for 3-4 whistles on low flame. When pressure comes down, open the lid and check chickpeas become soft or not. If they are still tough, then add water if required and cook more for 1-2 whistles. (You can also use pan to cook them instead of pressure cooker but it will take more time.)
