Puliyogare(Tamarind Rice)

Puliyogare(Tamarind Rice) Recipe

Rinse 1 heaped cup sona masuri (230 grams) very well in water. Then add the rice in a pressure cooker, also add 1/4 to 1/3 teaspoon salt or add as required. Add 2.5 cups water, you can add water depending on the quality of rice.  Pressure cook for 10 to 12 minutes or 3 to 4 whistles or till the rice is cooked well, do ensure that the rice does not get overcooked, for the hand pounded sona masuri rice, pressure cooked for 14 minutes. when the pressure settles down on its own, remove the lid, fluff the rice.

Heat a tsp of oil, roast the ingredients under Bisi Bela Bath Masala, adding coconut at the end. Roast everything until it becomes slightly brown in color and dry grind it. You can prepare this a few days before if you are using kopra as it will not get spoiled. Store it in an airtight container. Pressure cook rice with 4 ½ cups of water for 4 whistles.

Grind the above-mentioned ingredients 'to grind' in a blender and keep aside. Place a saucepan over medium heat, add the ghee. To the ghee, add the onions, salt, bay leaves, saute until the onions turn translucent. Add the ground mixture, saute until the raw smell of the ginger/garlic goes away- about 3 minutes. Add the rice to this and saute in ghee for about 3 to 4 minutes. Don't brown or over roast the rice.
