Tambdi Bhaji (Amaranth Leaves) Recipe is a tasty and super delicious dish. It is easy to prepare and takes just about 30 minutes to make it.
- 1 large bunch of red amaranth
- 1 onion (chopped)
- 2 green chillies (slit)
- 1 tomato (chopped)
- 1/2 cup green peas (optional)
- 1/4 cup grated coconut
- 2 tablespoons oil

- Clean, cut tender stalks and leaves fine. Wash and rinse well using a colander. You can use a salad spinner to remove excess moisture.
- Heat oil in a pan and fry onion until soft. Add tomato and green chilies. When the tomato is pulpy, add the chopped vegetable and salt. Cover pan and cook on low heat till vegetable nearly cooked. Stir in peas, cook for a couple of minutes and garnish with grated coconut. Serve as a side dish with rice and fish or meat curry.
