Pongal Recipe

Dry roast moong dal and rice separately until it is hot to touch. Do not over fry it. Fry cashew nuts in a tsp of ghee and keep it aside. Mix both rice and dal, pressure cook adding salt, 2 1/2 - 3 cups of water for 4-5 whistles.The rice has to be cooked in such a way that it should be mushy.

Ghee Rice Recipe

Grind the above-mentioned ingredients 'to grind' in a blender and keep aside. Place a saucepan over medium heat, add the ghee. To the ghee, add the onions, salt, bay leaves, saute until the onions turn translucent. Add the ground mixture, saute until the raw smell of the ginger/garlic goes away- about 3 minutes. Add the rice to this and saute in ghee for about 3 to 4 minutes. Don't brown or over roast the rice.

Clean and cut the chicken into small pieces Take a bowl and add corn flour, Kashmiri red chilly powder, pepper powder, beaten egg, curd, ginger garlic paste, lemon juice and salt to make a thick paste. Marinate the chicken pieces with this paste and keep aside for at least 3 hours.

Mix onions, green chillies, red chilli powder, coriander, lemon juice, ajwain, and salt. Add besan to the mixture and slowly pour in water, to form a thickish consistency.

Grind all the masala items together to make a smooth thick paste. Heat oil in a vessel and fry onions to golden brown. Then add Chicken, Potatoes & salt and fry for 5 mins. Add masala and fry well.

Fish Cutlet Filling: Boil, peel and mash the potatoes. Set aside. In a large pan or deep skillet, heat the oil. Add cumin seeds and curry leaves and allow them to crackle. Add onions and saute for a few minutes till soft and lightly golden in color. Add the ginger-garlic paste and chopped green chili and saute well till the raw smell is gone. Now add the turmeric powder, red chili powder, and garam masala powder and saute for a few seconds.
