Egg Curry Recipe is a tasty and super delicious dish. It is easy to prepare and takes just about 30 minutes to make it.

Ingredients:

  • 6 boiled eggs
  • ½ cup chopped onions
  • ¼ cup chopped tomatoes
  • ½ cup thick coconut milk
  • 2 cups water

For The Masala

  • ½ cup chopped onions
  • ½ cup grated coconut
  • ¼ teaspoon methi seeds
  • 4 whole red chilies
  • ¼ teaspoon cumin seeds
  • A pinch of carom seeds
  • ¼ teaspoon coriander seeds
  • 3 tablespoons rice bran oil
  • Salt to taste

For Seasoning

  • 2 teaspoons oil
  • ½ cup chopped onions

Method: Egg Curry Recipe

  • Dry roast methi, coriander seeds, cumin seeds, carom seeds, and red chilies. Set aside.
  • Add a little oil in a pan and sauté the onion and coconut. Add salt and cook until the coconut turns brown.
  • Grind the dry roasted masala.
  • Add the coconut mixture and a little water to it and blend it into a smooth paste.
  • Heat 2 tablespoons of oil in a pan and sauté the onions.
  • Add the smooth paste and tomatoes. Cook for 5-8 minutes.
  • Add 2 cups of water and bring it to a boil. Simmer it for 15 minutes.
  • Add the eggs and cook for a minute.
  • Add the thick coconut milk and cook for 2 minutes.
  • Serve hot.
