Egg Curry Recipe is a tasty and super delicious dish. It is easy to prepare and takes just about 30 minutes to make it.
Ingredients:
- 6 boiled eggs
- ½ cup chopped onions
- ¼ cup chopped tomatoes
- ½ cup thick coconut milk
- 2 cups water
For The Masala
- ½ cup chopped onions
- ½ cup grated coconut
- ¼ teaspoon methi seeds
- 4 whole red chilies
- ¼ teaspoon cumin seeds
- A pinch of carom seeds
- ¼ teaspoon coriander seeds
- 3 tablespoons rice bran oil
- Salt to taste
For Seasoning
- 2 teaspoons oil
- ½ cup chopped onions
Method: Egg Curry Recipe
- Dry roast methi, coriander seeds, cumin seeds, carom seeds, and red chilies. Set aside.
- Add a little oil in a pan and sauté the onion and coconut. Add salt and cook until the coconut turns brown.
- Grind the dry roasted masala.
- Add the coconut mixture and a little water to it and blend it into a smooth paste.
- Heat 2 tablespoons of oil in a pan and sauté the onions.
- Add the smooth paste and tomatoes. Cook for 5-8 minutes.
- Add 2 cups of water and bring it to a boil. Simmer it for 15 minutes.
- Add the eggs and cook for a minute.
- Add the thick coconut milk and cook for 2 minutes.
- Serve hot.
